Our carefully crafted blend of cumin, garam masala and turmeric infuses each bite with bold, balanced flavor. The combination of either grilling, or baking then broiling, creates a beautiful contrast, with a lightly charred smoky exterior sealing in a juicy and succulent interior. Our version gets its brilliant hue from mild chili powder, not food coloring like some recipes. Serve with cooling cucumber raita, included in this kit, for a hearty and memorable meal.

3 lb chicken thighs or 16 oz paneer or 16 oz extra firm tofu
1 tablespoons ginger
1 tablespoons garlic
3 tablespoons oil
1 bunch cilantro
1 large white onion
3 tablespoons lemon juice
2-3 tablespoons ghee
For Raita:
½ large cucumber or 2 Persian cucumbers
1 1/2 cups plain yogurt
1 bunch cilantro
